  1. cook beef, chorizo and onion together.
  2. drain
  3. add garlic, tomato paste, salsa, seasonings.
  4. let simmer
  5. Meanwhile, make wild rice.
  6. Assemble: pour enchilada sauce in bottom of 12X9 " baking dish.
  7. Assemble: Onto each tortilla add grated cheddar cheese, beef mixture and rice. Fold with seam side down.
  8. Assemble: Pour remaining enchilada sauce on tortillas, sprinkle with grated cheese.
  9. Bake at 350 to 375°F until hot and bubbly.
  10. Ready to serve and ENJOY!
