Instructions to make Spanish rice:
  1. In a large handi or pan, white/brown rice in olive oil on medium heat. Add onion garlic and veggies cook onion rice mixture, stirring frequently. Until onion are softened.
  2. In a separate pan bring a chicken stock to a simmer.
  3. Add chopped tomato or tomato sauce, oregano & salt.
  4. Add rice to broth. Bring to a simmer. Cover. Low heat and cook 20-25 mins.
  5. Turn off the heat and let set for 5 mins. Serve hot hot with curd raita.
  6. Ready to serve and ENJOY!
