  2. take skin on chicken peices and wash well
  3. boil another pot of water for chiles
  4. prepare Chiles by slicing each one open . take the stem off ,and clean the seeds out of each chile
  5. once Chiles are prepared place them in boiling water for about 20 to 30 minutes
  6. also place chicken peices in other pot of boiling water for about 45 mins to an hour
  7. grate whole pound of cheese
  8. once Chiles are done cooking ,pour just the juice or sauce in a pot , that will be your sauce.
  9. once chicken is done cooking strain water and allow chicken to cool
  10. when chicken is cooled begin to shred peices and place in a bowl
  11. warm your corn tortillas on a comal and place in a plastic bag so they stay warm
  12. preheat oven to 375°
  13. begin rolling your enchilads with chicken and cheese and placing them in the pan pour sauce on top generously
  14. get your pan ready pour some sauc e in pan spread evenly
  15. once you are done rolling enchiladas and your pan is full ,sprinkle cheese on top and more sauce
  16. It is optional ,but you can also buy a can of sluced black olives and place them ontop of enchiladas before they are placed in oven
  17. once pan is ready and prepared , place in oven for 20 to 30 minutes or until cheese is completely melted.
  18. Ready to serve and ENJOY!
